Pumpkin Pie: Recipe
I don't like pumpkin pie. Just last week I published a post on pumpkin bread - and that is awesome! But I do not like pumpkin pie. Not at all. But my husband does and now my children do as well. I make this recipe for Thanksgiving because I love my husband and my step-father who, between the two of them, usually nearly finish it. I know this is a great recipe and if you like pumpkin pie then please use it. It's so easy - I cheat with a frozen pie crust. So in less than an hour and a half, you'll have a beautiful and delicious pie for any fall occasion. Be sure to cool it completely.
Old Fashioned Pumpkin Pie
1 frozen pie crust
15 oz. canned pumpkin
2/3 cup brown sugar
2/3 cup heavy cream
1/3 cup whole milk
2 large eggs
1/4 cup sugar
1 tsp. vanilla extract
1 tsp. brandy
3/4 tsp. ground ginger
1 1/4 tsp. ground cinnamon
1/8 tsp. ground allspice
1/4 tsp. ground nutmeg
1/4 tsp. salt
Preheat oven to 375. In a large bowl combine all ingredients except the crust. Whisk well and pour into the frozen crust. Place pie onto a cookie sheet and place into the oven. Bake 1 hour. When the hour is up, open oven door slightly leaving pie inside for at least 10 minutes before removing and placing it onto a cooling rack to cool completely - at least 2 hours.
