Hot Day? Cold Peas!: Recipe

Somewhere along the way, my family has adopted a great quick dish that has become a regular at the party table and on a day like today (so super hot!), I am thinking about no-fuss, no-cook, dishes. People love this dish and it holds so well if made in advance.


A Salad of Cold Peas
2 packages of C&W Frozen Petite Peas (16 oz pkgs)
1/2 cup vegetable oil
3 Tbls. Red Wine Vinegar
2 Tbls. chopped scallions
1 Tbls. minced parsley
2 tsp. diced pimento
1 tsp. salt

Place the peas in a colander and run very, very hot water over them for about 1-2 minutes or until bright green and tender. Drain well.

Add all remaining ingredients except for oil and vinegar. In separate bowl, whisk oil and vinegar until well mixed and pour over peas. Mix well, cover and refrigerate 1-2 hours.
