The "Healthy" Side of Turkey-Day

I received an S.O.S. from a friend after reading the last blog entry. She wondered what vegetable recipes I had in my repertoire. So I looked over the recipes I've listed before and offer the following. I did not offer up any sweet potato or other such things as everyone seems to have those down pat, already...but perhaps you want to try one of these?

* Roman-Jewish Fried Artichokes (these are a tremendous hit - I promise!) and they look awesome

* Carrots with Chives (scroll past the Korean Ribs)

* Cherry Tomato Salad in Lemon Poppy Dressing (something to counter-balance the turkey)

* Stuffed Tomatoes with Andouille Sausage

* Salad of Cold Peas (always a fantastic hit)

* Bibb Lettuce with Apples, Craisins, Walnuts and Goat Cheese
